Chipotle Salmon Tacos

These zesty salmon tacos are bursting with flavor and nutrition. Recipe by Casey Colodny of The Mindful Hapa.

Seared Salmon Bites:

1 pound sockeye salmon, cubed

2 teaspoons chili powder

1 teaspoon kosher salt

1/2 teaspoon ground cumin

1/2 teaspoon paprika

Zest from 1 lime

2 tablespoons olive oil, divided

Creamy Chipotle Sauce:

2/3 cup tahini

1/2 cup water plus more to thin if needed

1/3 cup fresh lime juice ~1 lime

Zest from 1 lime

2 chipotle in adobo peppers

1 tablespoon sauce from can

2 cloves garlic, peeled & cut into quarters

2/3 cup fresh cilantro

1/2 teaspoon salt, more to taste

Chipotle Slaw:

4-5 cups green cabbage, shredded

1/3 cup fresh cilantro, rough chopped

1/3 cup scallions, sliced thin

3/4 cup creamy chipotle sauce from above

Taco assembly:

6-8 6-inch tortillas, warmed

Avocado, cubed

Fresh cilantro, roughly chopped

Cooked black beans


To a medium mixing bowl, add your cubed salmon. In a separate small bowl, stir together chili powder, salt, cumin, paprika, and lime zest. Sprinkle spices over cubed salmon and stir until evenly coated. Drizzle with 1 tablespoon olive oil and set aside to marinate for 20–30 minutes.

For the creamy chipotle sauce: to a small food processor, add your tahini, water, lime juice and zest, chipotle peppers in adobo and sauce, garlic, cilantro, and salt. Blend until smooth and set aside.

For the chipotle slaw: add shredded green cabbage to a medium-size mixing bowl along with chopped cilantro and scallions. Top with around 3/4 cup of creamy chipotle sauce and use tongs to stir together until combined. Set aside.

After the salmon has marinated, add 1 tablespoon olive oil to a large cast iron skillet and heat to medium. Add cubed salmon and cook for 2-3 minutes per side, or until browned and cooked through. Remove and set aside.

Assemble your tacos: to each warmed tortilla, add chipotle slaw and top with 3-4 pieces of cubed salmon. Top with warmed cooked black beans, cubed avocado, chopped cilantro, and an extra drizzle of leftover creamy chipotle sauce. Serve immediately and enjoy!
