Grilled Black Bean Garlic Salmon


Kristina Cho of Eatchofood.com created this simple yet flavorful family recipe for grilled black bean garlic salmon.

Ingredients

4 large garlic cloves

2 tablespoons Chinese fermented black beans

1 1/2 pounds wild sockeye salmon, cut into 4 portions

2 tablespoons olive oil

1/2 teaspoon coarse salt

1/2 teaspoon white pepper

Neutral oil, for grilling

Directions

Smash the garlic cloves against the edge of the wide knife and mince. Add the black beans to the cutting board and minced garlic; start mincing the black beans into the garlic to form a coarse paste.

In a resealable container, mix to combine the salmon, olive oil, black bean and garlic paste, salt, and white pepper. Allow the fish to marinate at room temperature for 30 minutes while you warm up the grill, or chill in the fridge for up to 2 days.

Preheat the grill grates and brush with neutral oil. Once the grates are hot, place the salmon on skin-side up, over direct heat, and grill until the flesh is firm, 3-5 minutes. Flip with a fish spatula and grill the skin until it’s crispy, another 3-5 minutes. Transfer to a platter and serve.
