Salmon Hand Rolls with Green Sauce
Colorful, fun, and packed with flavor, salmon hand rolls are easy to make, great for sharing, and full of nutrients. Recipe developed by The Modern Proper.

Ingredients
- 1 (1-pound) sockeye salmon fillet
- 2 teaspoons toasted sesame oil
- ⅓ cup soy sauce
- ¼ cup seasoned rice vinegar
- 1 tablespoon brown sugar
- 4 garlic cloves, minced
- 2 teaspoons minced fresh ginger
- 10 sheets nori
- 3 cups cooked sushi rice
- 1 tablespoon toasted sesame seeds
- 4 Persian cucumbers, cut into matchsticks
- 1 red bell pepper, cut into matchsticks
- 1 orange bell pepper, cut into matchsticks
- 2 cups loosely packed microgreens (optional)
Green Sauce
- 1 cup loosely packed cilantro leaves and stems
- ½ large avocado
- ½ cup sweet chili sauce
Directions
- Turn the oven on broil with a rack in the center position. Place the salmon on a large rimmed sheet, skin side down.
- In a small bowl, combine the sesame oil, soy sauce, vinegar, sugar, garlic and ginger. Brush the marinade over the salmon. Broil until the salmon flakes easily with a fork, about 10 to 12 minutes.
- Meanwhile, in a small blender, combine the cilantro, avocado and sweet chili sauce. Blend until smooth, adding 1 to 2 tablespoons of water if needed.
- Following the instructions on the nori package, layer each sheet with rice, sesame seeds, cucumbers, red bell pepper, orange bell pepper, and microgreens, dividing evenly.
- Flake the salmon with a fork and divide among the rolls. Roll each tightly to secure the ingredients.
- Serve the hand rolls with the green sauce alongside for dipping.
Note: Oven temperatures vary and the broiler is a super hot tool, so just keep a close eye while it cooks.
