Salmon Niçoise Salad

Flaky salmon, bright tomatoes, crisp butter lettuce with tender tomatoes and snappy green beans – this simple salad comes together with your favorite Italian dressing for the perfect light lunch or prelude to dinner.

1 1/2 cups prepared Italian dressing

14-16 ounces canned salmon, drained and chunked

6 cups mesclun, butter or baby lettuces

12 ounces red potatoes, cooked and quartered

8 ounces whole green beans, thawed or blanched

4 tomatoes, vertically sliced1/2 cup olives

2 hard-cooked eggs, halved

Capers, as needed


Drizzle 2 tablespoons dressing over salmon; cover and set aside. Drizzle 2 tablespoons dressing over warm potatoes; cover and set aside. 

Evenly divide the lettuce, potatoes, green beans, tomatoes, olives, egg halves, and salmon on each serving plate. Sprinkle capers on egg halves. Drizzle each with 1.5 ounces of dressing or serve it on the side.
